Food-grade sodium carbonate (E500(i)) is refined soda ash meeting purity standards for human consumption: ≥99.0% Na₂CO₃, with tight heavy metal limits-arsenic ≤3 ppm, lead ≤4 ppm.
Its roles are specific and regulated. Alkaline noodles incorporate 0.5–2% to strengthen gluten, develop yellow color, and create springy texture. Pretzel and bagel baths use dilute solutions for glossy, browned crusts. Cocoa Dutching neutralizes acidity, darkening color and mellowing flavor for chocolate beverages.
Direct leavening is prohibited-residual alkalinity is too harsh; sodium bicarbonate serves that role instead.
Shelf life runs 24–36 months in moisture-barrier packaging. Caking indicates moisture ingress but does not necessarily compromise safety if specifications hold upon retest.
